Bianco Spumante Extra Dry
Cà Nova's Bianco Spumante Extra Dry is an elegant and versatile sparkling wine, obtained from a balanced blend of white grape varieties. Fresh and enveloping, it combines delicate aromas and a pleasant structure, offering a harmonious taste that naturally accompanies various moments of tasting. Also available in a 1.5 litre Magnum format.

Production process
Made with a careful selection of grapes from hilly areas specifically intended for the production of sparkling wine.
The grapes are harvested manually and transported in crates, then processed whole in a soft press to extract only the free-run juice. After thorough cleaning, the sparkling process begins with a first fermentation in an autoclave, following the Martinotti method. The wine is then filtered and bottled.

Organoleptic characteristics
With its bright colour, the wine is ideal for drinking young but has a remarkable capacity to evolve over time, offering aromas of wild white berries, delicate citrus fruits and hints of peach and elderflower.
The taste is intense and well-defined, with an enveloping pleasantness that combines softness and light savouriness. Mineral notes and excellent persistence accompany a fine and lasting perlage.
Food pairings
It pairs perfectly with risottos, soups and white meats, enhancing their flavours. It reaches its maximum expression when paired with fish, shellfish and seafood dishes. Ideal for enjoying as an aperitif, it proves to be extremely versatile in accompanying an entire meal.
Magnum format
In addition to the standard format, the wine is also available in a Magnum bottle, which is particularly appreciated for sharing and presentation at the table.
