Production process
The grapes, carefully harvested by hand, are then gently pressed to preserve their intrinsic characteristics. The primary fermentation phase takes place in temperature-controlled tanks (15-18°C) and lasts for about 20 days, ensuring a slow and careful process. Subsequently, the second fermentation process takes place using selected yeasts and lasts between 60 and 90 days, in order to obtain a high-quality product.

Organoleptic characteristics
The wine has an intense and bright straw yellow colour. The bouquet is distinguished by its complexity and stratification: fresh notes of Mediterranean scrub emerge, accompanied by floral hints of broom and small arbutus berries, combined with delicate nuances of exotic fruit, apple and acacia honey. On the palate, it is refined and intriguing; the sweet and fruity attack gradually evolves into a marked minerality that gives a pleasant savouriness to the finish. The structure has a strong and characteristic body, with excellent aromatic persistence that enhances its personality.

Ideal as a refined aperitif, this wine lends itself to multiple pairings that enhance its acidic and savoury nuances. We recommend pairing it with risottos, such as red radicchio or courgette and Taleggio cheese, as well as elegantly accompanying a meat fondue or a selection of cheeses.
